Ingredients:8 skinless, boneless chicken breast and thighs¼ cup olive oil or cooking oil of your choice 300g button mushrooms2 cloves garlic, crushed1medium onion finely chopped1 trimmed stick scallion chopped¼ cup plain flour2 cups orange juice1 ½ cups chicken stock2 tablespoons tomato paste3 bay leaves3 sprigs fresh thyme2 sprigs fresh rosemarySalt to taste1 teaspoons paprika1 tablespoon grated orange peelOrange slices
Preparation1. Rinse chicken breasts with vinegar or lime juice to get rid of any impurities. Pat it dry with kitchen towel or paper towels. Then season each chicken parts equally with salt, paprika and orange peel.2. Heat 1 tablespoon of the oil in large frying pan; then cook onion and scallion, stirring remove from pan when they are brown. Add mushrooms and garlic to same pan; cook and stir until brown then remove them from pan. 3. Toss seasoned chicken breast and thigh in flour; shake off excess flour. Heat remaining oil in same pan. Cook chicken until tender and juices run clear then drain them on absorbent paper. .4. Place chicken in a different pan with stock orange juice, tomato paste, bay leaves, herbs, onion, scallion and mushroom mixture. Bring to a boil; simmer in medium heat, partially covered, about 35 minutes or until chicken is tender and sauce has thicken slightly. Remove bay leaves before serving. .5. Garnish with orange slices if desired.Hope you and your family has a big appetite!
