1 cup diced, cooked chicken breast
1 1/2 tsp. minced onion
1 tbsp. lemon juice
1/2 cup chopped celery
1/2 cup seedless grapes
1 cup chopped hard-boiled egg
5 tbsp. mayonnaise
3/4 cup mandarin oranges
1/4 cup almonds slightly roasted in butter
Combine chicken, egg, onion, lemon juice and celery in a large bowl. Let it stand 15 minutes. Add grapes, mayonnaise, oranges and almonds. Mix well and serve.
You may also use tuna fish or turkey in place of the chicken.

1st: You may fry, boil, grill, bake or roast your seasoned chicken breasts. Wait until they are quite cold. Having removed all the skin and fat, and disjointed the chicken, cut the meat from the bones into very small pieces, not exceeding an inch. Wash and split two large fine heads of celery and cut the white part into pieces also about an inch long; and having mixed the chicken, celery and lettuce together, put them into a deep dish, cover it and set it away.

Chicken salad can be accompanied with plates of bread and butter.
